Perfect White Rice (Arroz Blanco)

INGREDIENTS:
2 cups raw long-grain white rice or converted long-grain white rice
2 tablespoons pure Spanish olive oil
2 teaspoons salt
4 cups water if using long-grain white rice; 5 cups water if using converted

1 Combine all the ingredients in a large saucepan, bring to a boil over high heat, and cook, uncovered, until most of the water has been absorded and small craters from on top of the rice, 10 to 15 minutes.
2 Stir the rice with a fork, cover, reduce the heat to low, and cook until the rice is fluffy, 8 to 10 minutes. Fluff the rice with a fork and serve immediately.

Get some basmati rice, when you want to cook, wash the rice, place in a pan with twice as much water as rice, and a tablespoon of butter for each cup of dry rice. Let it soak for two hours or more. Bring to a boil, reduce heat to simmer, stir once, cover and let cook for twenty minutes.

That's a good start, it will be the best rice you ever had.

Then you can make Spanish rice, using tomato sauce, chunks and onions and peppers to taste. Mix with white gravy and sausage. Fry with onions and sausages. Use your imagination, you can do most anything with rice that you can with other starch foods. Make rice pudding. Use with ham chunks and cranberries to stuff cabbage leaves. Mix with chili beans or refried beans. Mix with milk and sugar and a little cinnamon. Etc., etc...

Rice can be flavored by cooking it with green tea rather than water. You can also flavor it with chicken broth. Then there are always seasonings such as this, take 2 Tbls. of olive oil, 1 Tbls. of Goya's Sazon Achiote seasoning, 2 cloves of chopped garlic, 1 small chopped onion and 1 chopped bell pepper. Saute. Stir in 1 1/2 cups uncooked rice to coat. Add 2 cups water or chicken broth (chicken broth is my preference) and cook until tender. When almost done you can add beans such as pidgeon peas, pinto beans, black beans, whatever you desire. Squeeze in the juice of 1/2 lime and there you have it.

I really like to cook the rice and oput it to the side. In a pan cook some chopped spring onion, peas, corn, chopped tomatoes(deseded), and some cubed par boiled pots. Cook until the potatoes are cooked through. Add the ric and 2 tsps of curry powder. It's lovely, I then use the mix to stuff a flat mushroom, or peppers. My husband likes it with steak.

I always add a bouillon cube to the water when I'm cooking it. It's just a light subtle hint of flavor, that doesn't over power it.

I've also been known to add hot sauce to the cooking liquid.

I add lemon zest to the water when it's boiling. It gives it an amazing yet mild Mediterranean taste. You can taste it when its done & if it needs more lemon then add a few drops of lemon juice and toss before serving!
