To prepare bok choy or baby bok choy, simple trim The stems and braise the vegetable whole or you can chop the leaves and slice the base along its ribs raw. Heat a little oil or butter in a deep skillet. A dd a layer of bok choy and saute 2 minutes. Add 1/4 to 1/2 cup broth or water, cover, and simmer until tender.

I've only bought baby bok choy and cooked the whole thing.
Make sure you thoroughly wash them however beforehand.

I trim off the tough bottom part of the stalk and them chop-up the rest of it (white and green parts)

you cook the whole thing, just cut the very bottom part off.
