So you know how there were dinosaurs, and that they were pretty big, and ruled the Earth for longer than humans have so far, well why didn't God write about them in the Bible? Was he embarrassed about them, and hoped we wouldn't notice their fossilised remains? Or were they completely separate, and did he write them their own dinosaur Bible before killing them all off and creating his next plaything, us?

Since the topic of the Bible is salvation and God's relationship with mankind, why would God inspire the scriptural writers to wander off into a discussion of zoology or paleontology? The Bible doesn't describe elephants either. Why would it?? The Bible does in fact describe some of the large animals of the time, like the hippopotamus (Behemoth) and the crocodile (Leviathan), and some people even try to force these passages to refer to dinosaurs; but since the people of biblical times were completely unaware of dinosaurs, that obviously is not valid exegesis. When an occasional giant bone was found, they attributed it to an extinct race of giant humans, not giant reptiles.

Dinosaurs only arrived on the planet after two hundred million years when it was dominated by amphibians and amphibian like reptiles. Dinosaurs were just the product of a climate that was very different from today's that favoured large cold blooded reptiles over other types of animal.

You clearly have not read your Bible.
The Book of Job describes dinosaur-like beasts, which existed at the time of Job on Earth.
Here's a couple verses, but I encourage you to read the passages surround the verses and read the descriptions of these wonderous creatures. The word "dinosaur" is a modern word. The word did not exist in the days of Job, but the animals did, and they are called by name.

Job 40:15 Behold now behemoth, which I made with thee; he eateth grass as an ox.
Job 41:1 Canst thou draw out leviathan with an hook? or his tongue with a cord which thou lettest down?

some believe that God knew we would need oil in the future so he created the dinosaurs to provide oil for us. Okay, I know it is a stretch, but is it really any More unrealistic than some of the other theories?
