I love to get books out of the library for new ideas.
My favourite book that I have found is Rose Reisman Brings Home Light Cooking this recipe is from her book.
CURRIED PUMPKIN AND SWEET POTATO SOUP
1 ½ tsp veg oil
1 tsp garlic
1 cup chopped onion
2 ½ cups stock
8oz (250g) peeled and chopped sweet potatoes
1 cup canned pumpkin
1 ½ tsp curry powder
½ tsp coriander
1 tsp honey
½ tsp ginger
¾ cup (175mL) 2% milk
In nonstick saucepan, heat oil; sauté garlic and onion until softened, approximately 5 minutes.
Add stock. Sweet potatoes, pumpkin, curry, coriander, honey and ginger; reduce heat, cover and simmer until potatoes are tender, approximately 40 minutes.
Puree until smooth. Return to saucepan stir in milk until blended.

LASAGNA WITH ZUCCHINI, RED PEPPER AND MUSHROOMS
Preheat oven to 350 F (180C). 13”x9” (3L) baking dish spray with non-stick vegetable spray
9 pre cooked lasagne noodles
1 tbsp veg oil
1 ½ tsp crushed garlic
1 c chopped zucchini
1 c onion
1 c diced sweet red pepper
1 c sliced mushrooms
2 c tomato sauce
540 mL (19 oz) crushed tomatoes
1 tsp dried basil
1 tsp dried oregano
1 ½ c 2% cottage cheese
½ c 2% milk
½ c grated Parmesan cheese
8 oz shredded mozzarella cheese
In large nonstick skillet, heat oil; sauté garlic, zucchini, onion, red pepper and mushrooms until softened, approximately 8 minutes.
Add tomatoes, sauce, basil and oregano; cover and simmer for 15 minutes, stirring occasionally. Meanwhile, in food processor, combine cottage cheese, milk, and Parmesan cheese. Set aside. To assemble, arrange 3 noodles in bottom of baking dish.
Pour 1/3 of sauce over top. Pour half of the cheese mixture over top. Repeat layering once. Top with remaining 3 noodles.
Pour remaining sauce over top; sprinkle with mozza cheese.
Bake, uncovered, for 30 minutes or until hot. Let stand for 15 minutes before serving.

If you are lucky enough to have aTrader Joe's within
driving distance, your worries are over. They have pre-made
delicious meals in every catagory. Their prices are fantastic
and none of their products contain preservatives. They have
healthy gourmet food from all over the world, farm raised
chicken and salmon from deep Norweigan waters that are
as of yet unpolluted. If not, you can eat anything by wrapping
it in foil, putting light soy sauce and herbs over it and baking
until done...fish takes only a few minutes. They have healthy
brown "instant" rice now and desserts made from soy....ice
cream for instance ..it comes in all flavors. Stir-fry is. another way...once a week, chop up onions, green peppers,
mushrooms, carrot strips, broccoli, garlic, etc. and the
protein of your choice and put each in their separate
containers in the fridge or freezer. When you come home
all you have to do is take them out, spray a large frying pan
with no-cal vegetable oil, add the ingredients and have a
great, healthy meal in a matter of minutes. You can vary
these ingredients accordingly. A crock-pot is wonderful
too as it cooks on low all day while you are gone and when
you return, dinner's ready and can even be served out of it.

Maybe try some low-fat egg mixes, ones that you can just add some meat or vegetables in and you have an omelette. they're healthy, low sodium, low fat, low carb, high protein,and high in omega 3 and 6 enzymes, which are proven to improve memory and restore health. Wonder why the japanese live so long? fish contain omega 3 and 6 and that's all they eat. try the omelette idea, it makes a good balanced meal. also maybe some frozen stir-fry vegetables mix with some beef and some rice. or some pasta with low-fat sauce and a platter of cold veggies on the side.

Stir fry is always great.
Stir fry some crushed galic chilli and ginger in some olive oil, or low fat cookin spray theen add some sliced chicken/pork and cook, if is thinly cut it only takes mins. Add some soy sauce, add the veg (beansprouts, peppers, carrot, snow peas, baby corn, onion, bamboo shoots) add a little more soy sauce so the veg have a slight coating, cook till the veg is wilted. Serve with brown rice or noodles. You can either add cooked rice/noodles to the veg& meat or serve them together. If you get pre chopped/sliced veg it takes bout 15 mins to cook :-)
