You won't die. But you will suffer some health effects. A balanced diet is essential to a healthy life.

You won't die if you don't eat your veggies-- the other stuff you eat can keep your body going, but you won't be as healthy either. I found that when I conciously tried to eat at least 4 servings of veggies and at least 2 of fruit every day, I had more energy and just felt better and healthy. Not eating healthy can have long term affects such as the one's that you mentioned above. It won't kill you quickly, but your body will suffer if it doesn't get the right nutrients.

You could have a miserable life without minerals and fiber in vegetables (fresh salads, not fried veggies)

Meat - plenty. Carbo's - plenty. Still be alive and happy. Oh don't forget beer - you need your vit's and min's.
