Garlic and onion complement the flavor of garbanzos very well, along with a splash of lemon juice. Mint also goes well with them, as does thyme, oregano, and cumin.
Here's a good recipe for baked garbanzos with pistachio nuts:
INGREDIENTS
2 (15.5 ounce) cans garbanzo beans, drained
1/4 cup corn oil
1 teaspoon sea salt
1 teaspoon ground cumin
1 teaspoon ground black pepper
1/2 teaspoon cayenne pepper
1 cup shelled pistachio nuts
2 teaspoons chopped fresh thyme leaves
DIRECTIONS
Preheat oven to 400 degrees F (205 degrees C).
In a bowl, toss the garbanzo beans together with the oil, sea salt, cumin, black pepper, and cayenne pepper. Transfer to a shallow casserole dish.
Bake in the preheated oven, stirring occasionally, until garbanzo beans are golden and crisp, approximately 20 minutes.
Remove from the oven, stir in pistachios and thyme, and continue baking an additional 10 minutes, or until beans and pistachios are lightly crispy. Serve immediately.

Garlic... as in Hummus
Italian seasoning
Greek seasoning
Indian spice
They are used in the Mediterranean areas and the middle east and since they are bland and kind of take on the flavors of what you put into them, you can go in any direction really...
When dieting to loose a few extra Lbs. I love this recipe...
Brown rice (Boil in bag is fine)
Cici beans (or garbanzo beans.)
some frozen vegetables like the smaller sized mixed package
good olive oil
Flour Tortillas
hot sauce.
Garlic powder
onion powder
(whatever spice combination you like)
make the rice and drain. Mix all of the ingredients in a saute pan on medium in the olive oil
add the spices or the curry or whatever you like?
Wrap the mixture in the tortilla and enjoy!
Yummy, low fat and low calorie. It is also packed with both the fiber and the protein your body needs to metabolize the fat! Just watch the olive oil... you don't need much!

If you want to go with a Latino flair, try adding fresh chopped cilantro, chopped tomatoes, onions, and some garlic. You can serve this hot or cold and it is good both ways.
If you want to go with an Asian flair, try garam masala, onions, and red peppers. Again, this can be served hot or cold.
I have also mixed them with black beans or other beans with a little vinaigrette for a multi-bean salad. This is usually better cold.

Wish my husband did.
