Generally you would make them the same way as any other kind of meatball, except you would use kosher meat.

But then there is the question of your kitchen, because all the equipment in it has to be koshered first. If you don't already have a kosher kitchen, then even if you buy kosher meat it becomes unkosher if it comes in contact with unkosher cookware, etc.

It would help to know who you are preparing this for and what their standards are in order to give you better guidence in this matter. If it is someone who is fully Orthodox and observant then I would say you shouldn't bother with trying as anything you make in your kitchen will not be good enough.

maybe search a recipe online for kosher meatballs or soy meatballs even.

I would check into a jewish deli or butcher shop.
