I have found that it makes a lean and tender substitutue for ground pork! So I end up using it in meat balls, egg rolls etc. Here is a "Chinese Spaghetti" recipe for you to try.
1 lb ground turkey
2 Tbsp soy sauce
1/2 tsp salt
1/2 tsp 5-spice powder
4-6 cloves garlic, minced
1 Tbsp minced fresh ginger root
Mix turkey with soy sauce, salt, 5-spice powder, garlic, and ginger root. Let this sit as long as possible in the fridge--it's fantastic if I do it in the morning but 1/2 hour will do.
Sauce
3 Tbsp oyster flavored sauce
2 Tbsp soy sauce
1 Tbsp dry wine
1 Tbsp sesame oil
Mix together in small bowl and set aside.
2 stalks celery, julienned into 2-3 inch strips
2 large carrots, Julienned into 2-3 inch strips
1 large onion, peeled, cut in half, thinly sliced into c shaped arches (onion rings cut in half)
1 lb "french style" green beans
1 lb dried spaghetti, broken into 4-6 inch pieces, cooked according to package directions, then drained and rinsed with cold water.
Spray large non-stick skillet with cooking spray and heat until very, hot. Add carrots and cook 1 1/2 min. Add celery to pan and cook 2 min. longer. Add meat to pan breaking it up into small pieces and cook until all pinkness is gone and it is broken up into small pieces. Add green beans to pan and cook until they are heated through. Add onions, spaghetti, and sauce and gently toss until well heated. Serve, will serve a family of 6 if there's little kids or 4 grown men!

This isn't the exact repipe my mom uses but I LOVE IT!!! She makes her meatballs with rice, but I couldn't find a recipe that does that. Ingredients 2 lbs ground turkey 1 1/3 cups matzo meal 2 eggs 2 cloves garlic , minced 1 (16 ounce)box uncooked tri-color spiral pasta 2 large carrots , peeled and sliced 2 large tomatoes , chopped 1 large onion , chopped 4-6 cups tomato juice (depending on how strong you want the tomato flavor) 6-8 cups water 1 (10 ounce)package frozen spinach , thawed italian seasoning (about 1 T) black pepper margarine , for browning Directions 1Mix turkey, matzo meal, and eggs well. 2Shape into 1-inch meatballs. 3Cook the meatballs either by browning them in a skillet or boiliing them in water Brown garlic in a saucepan. 4Combine all ingredients except spinach in a large pot. 5Heat to a boil, cover, reduce heat, and simmer for 15 minutes. 6Add spinach and cook about 5 more minutes until pasta is tender

My kid's love turkey cordon bleu burgers. Mix ground turkey with some grill seasoning and finely minced onion. Shape into patties and grill. A couple of minutes before the burgers are done throw some Canadian bacon slices on the grill and warm through. Top the burgers with swiss cheese and the warm canadian bacon. Place on buns slathered with a mixture of dijon mustard and mayo. They're delicious!
**these are also good with ground chicken

Here are my two favorite versions of older classic recipes, and the recipes I often turn to when I want something delicious, and in a healthier version. I have served the meatloaf at a dinner party and everyone loved it!
Porcupine Meatballs (Kids love to help make these, and love to eat them)
2 LB ground lean turkey
1/2 C uncooked long grain rice
1/2 C egg substitute
1 small onion, grated, or finely chopped
2 Tbsp fresh parsley, chopped
kosher salt and freshly ground pepper to taste
2 cans Cream of Tomato soup (lower fat, reduced sodium versions works well)
1/2 can of water
Mix first 6 ingredients and shape into 24 meatballs. (EASY MEATBALL ASSEMBLY: Cover cutting board with wax paper. Take meat mixture and shape into a long thin rectangle. Use your knife to score into even sized portions--24 for this recipe--Pinch off segments and roll well to form ball.) Place meatballs as they are rolled into 2 quart baking dish. Mix tomato soup with water. Pour over meatballs. You want the liquid to almost cover the meat. (You may need to add more water)
Cover tightly with aluminum foil or tightly fitting lid, and bake at 350 for 1-1/2 hours. Turn 1 or 2 times while baking. If the meatballs are well covered with liquid, I usually do not turn. Be sure to recover tightly. I like to take the cover off for the last 10-15 minutes to allow the liquid to reduce and thicken slightly.
Great served with garlic mashed potatoes, and cream style corn. Real comfort food!
And now, here is the the very best meatloaf I’ve ever made or eaten:
ITALIAN MEATLOAF
1-1/2 # Ground Turkey
2/3 C Old Fashioned Oatmeal
1/4 tsp Italian Herbs
3 Cloves garlic, finely minced
1/2 tsp seasoning salt
1/2 tsp fresh ground pepper
2/3 C egg substitute
8 oz can Peas & Carrots, drained
2-1/4 oz Sliced olives (black, pimento stuffed, kalamata--what ever rings your chime) sliced, divided IN HALF
14-1/2 oz Diced Tomatoes seasoned with onion/herbs, undrained
Heat oven to 325. Mix first 7 ingredients very well. Add the peas, carrots & 1/2 of the olives. Blend gently until mixed very well.
Place in 9x13" pan, and shape into 9X5" loaf. Bake for 30 minutes. Mix remaining olives with the undrained tomatoes. Spoon over the loaf, and bake all for additional 30 minutes, or until meat thermometer registers 160 in center. Let stand for at least 5 minutes before slicing and serving with tomato topping. I generally double the recipe because it is great as a sandwich the next day!!!
This is great with mashed potatoes, mashed cauliflower, or with a whole wheat pasta, a nice green vegetable and salad.
