I really need a side dish that is mostly vegetables, not a potato side dish. But If it was vegetables AND potatoes then that would be great. If not, then just an easy vegetable (not broccoli) side dish would be great! Thanks!

OK Green Giant makes an excellent side dish that all you need to do is stick in the microwave & heat to go along with your scrumptious salmon it's called "Roasted Potatoes with Garlic & Herb Sauce
Sugar Snap Peas & peppers"

If you can't find it in your local frozen foods isle I would suggest...

6 Red potatos (this serves 4-6)
2 cups of diced peppers (you can use frozen kind a combo od green, red & yellow
3 cups of Sugar snap peas
olive oil
Garlic powder
italian seasonings

Toss the washed (cut into fours) potatos in to a sealable baggy
Add olive oil, italian seasonings & garlic powder (just eye the ingredients make sure potatos are covered & don't worry about adding too much) You can also do this in a large mixing bowl

Place on a cookie sheet and bake for 10 minutes on 350degrees

Add the remaining ingredients and toss them to make sure they have seasonings too (add some extra olive oil, garlic & italain seasonings if you think they need it)

Bake for another 10-15 minutes (make sure potatos are soft, you should be able to slide a fork in & out easily)

Take out of the over and place in to a large serving bowl or directly next plated salmon

This is a hearty, scrumptious side dish that is great for those cold winter nights! sooo yummy

Slice some potatoes as thinly as you can. Take a casserole dish and rub a raw and clove of garlic around the whole dish (cut the clove in half). Next, neatly layer the potato slices in the dish (you can use sweet potato in between each layer of normal potato if you like, or even scatter some thinly sliced onions). Season each layer as you go. warm around a pint of cream (a large tub) (you can use milk and cream) and then pour this over the sliced potato, dot with some butter nd bake for about 45 minutes or until the the tatties are soft.

Cut 5-6 small red or white potatoes into quarters. Boil until just soft and drain.

While the potatoes are boiling melt 1/2 stick of butter with 1 teaspoon basil and 3-4 minced garlic cloves.

Place cooked potatoes in a bowl, pour melted butter over them and turn gently to coat while avoiding smashing the potatoes.

I will make it super easy for you! Thinly slice a potato (I use yukon gold. Slice a zuchini and an onion, Set these in the middle of a piece of foil. (I use reynolds pop up wrappers) Put your piece of salmon on top of the veggies, Top the fish with asparagus, season all with salt, pepper, herbs, a squeeze of lemon, drizzle of olive oil. Seal up the packet, chuck it in the oven 350 about 12 minutes. Serve with crisp salad and a nice bread to soad up the juice in the packet (open carefully-steam) If you plan on cooking your salmon a different way, you can still make the packets using only veggies of your choice. Its good if you add a little parm cheese to the veg too. Bon apetit! I serve the packets with a warning about the steam. Makes easy clean up-no pan!

take a 1/2 bag(16 oz) of baby carrots cook with 1 cup water about 12 minutes or until tender pour out 1/2 the water add 1/2 cup french or catalina dressing and 1/4 cup dark brown sugar, a table spoon of pancake syrup and simmer until mixture is heated ** i made this at christmas it was very good! use a lid on pan

ROASTED GARLIC IS A GREAT SIDE DISH. JUST DRIZZLE OLIVE OIL OVER THE TRIMMED ASPARAGUS (LEAVE THE SPEARS LONG) SPRINKLE WITH COARSE SALT AND PEPPER AND POP IN THE OVEN FOR ABOUT 20 MINUTES. OVEN FRIES ARE ALSO A GOOD ADDITION TO FISH. JUST PEEL (IF NOT ORGANIC) CUT INTO WEDGES DRIZZLE WITH OLIVE OIL, SALT AND BAKE ON A COOKIE SHEET ABOUT 30 MINUTES. LEMON WEDGES GO GREAT WITH THE FISH AND ASPARAGUS. ADD A LITTLE (JUST A FEW DROPS) OF TABASCO TO SOME KETCHUP FOR DIPPING THE FRIES FOR A LITTLE ZIP.

I like glazed carrots with salmon. I make this dish like so: I either slice big carrots or use baby carrots. Boil until JUST tender NOT mushy. Drain, add enough butter to coat and sprinkle with brown sugar. Cook and toss over med-low heat until carrots are glazed.

What about baked sweet potatoes? Just bake them in their skins and when cooked, split down the middle and add real butter and brown sugar-delicious!
