That is, I can say he or she is an Italian, an Australian, a Spaniard, an Armanien, a German, a New Zealander, an Englishman etc, but I can't say "Roger is a Swiss".... just kind of wondering really.

Actually you can say Roger is Swiss. "Swiss" is a term for a person from Switzerland. The only reason I wouldn't say "Roger is a Swiss" is simply a grammatical mistake. As stated previously, "Roger is Swiss" works Fine.

So there ya go..

It's most common to simply remove the "a" as in: "Roger is Swiss".
