God's instruction on food is found at ;(Genesis 6:21) And as for you, take for yourself every sort of food that is eaten; and you must gather it to yourself, and it must serve as food for you and for them.”
God himself forbade the Jews to eat pork, not because it was bad for them, but as a form of obedience.
Later, jesus changed this when he said ; (Acts 10:15) And the voice [spoke] again to him, the second time: “You stop calling defiled the things God has cleansed.” And'(Acts 11:9) The second time the voice from heaven answered, ‘You stop calling defiled the things God has cleansed.’

Some religions, like Hinduism rate cows as holy and kee it at a mother's status, as the cow gives milk, and thus is considered to be a other. That is why somwe religions abstain from eating cows.
But yes, this is a bit wrong...if we can't kill a mother, we cannot kill someone else's patrent or a child. If some people abstain from eating cow's meat, they SHOULD abstain from eating all meat. This IS injustice.
