~~~~~~~~~~ Chili-Garlic Grilled Tuna ~~~~~~~~~~
Prep: 10 min / Cook: 10 min

Fresh tuna is so dense, meaty, and flavorful that it makes a welcome alternative to beef steaks at a barbecue. If you can't find green jalapeno pepper sauce at your local supermarket, use the regular red-colored hot pepper sauce.

2 cloves garlic, minced
1/2 tsp each crushed red pepper flakes and salt
4 tuna steaks, 1-inch thick (8 ounces each)
1 tbsp jalapeno pepper sauce
4 tsp olive oil

1. Preheat the grill or preheat the broiler. In a small bowl, combine the garlic, pepper flakes, and salt. With a sharp, thin knife, make several horizontal slits into the side of each turn steak. Insert the garlic-pepper flake mixture into the slits.

2. Rub each turn steak all over with the jalapeno pepper sauce and oil. Grill or broil the tuna steaks 6 inches from the heat for 3 minutes per side or until the tuna is cooked to medium-rare. Serves 4.

21/2 tsp sugar
1 tsp salt
11/4 tsp dried oregano
1/2 tsp pepper
1/8 tsp allspice
11/2 pounds large red onions, cut into 1/2-inch cubes
4 tsp olive oil
1 tomato, diced
2 tbsp red wine vinegar
4 tuna steaks (6 ounces each)

1. Preheat the oven to 350 degF. In a medium bowl, combine the sugar, 1/2 tsp of the salt, the oregano, pepper, and allspice. Add the onions and 2 tsp of the oil, tossing well to coat. Transfer to a 9 x 13-inch baking dish, cover with foil, and bake for 30 minutes, stirring occasionally. Uncover and bake for 10 minutes. Transfer to a bowl, stir in the tomato and vinegar, and cool to room temperature.

2. On a grill pan or in the large nonstick skillet, heat the remaining 2 tsp oil over moderately high heat. Sprinkle the remaining 1/2 tsp salt over the tuna and cook, turning the fish over midway, for 5 minutes or until medium-rare. Serve with the relish spooned on top. Serves 4.

Delicious yet simple

GRILLED TUNA STEAKS

1 lb. fresh tuna, cut into 4 steaks salt and pepper to taste.lemon

Remove skin from the tuna. Preheat a 10 inch browning dish at high for 5 minutes. Add the steaks. Microwave at high for 1-3 minutes or until fresh flakes easily and is no longer pink.Sprinkle lemon juice before serving.

On a hot grill Grill. Rub the tuna down with Olive Oil with sea salt and pepper. If you're leaving the skins on your tuna, be sure to score the flesh otherwise it will cook the skin, the skin will tighten and your fish will 'bow' in the middle.. Sear for 3 to 5 minutes on each side, or until the outside is browned, but the inside is still a little pink. Squeeze of lemon and black pepper.. Simple.. tasty..

Or serve with this mango/jalepeno salsa

in a medium to low heat saute a splash of olive oil, onions, and ginger in a large for 10 minutes, or until the onions are translucent. Add a clove of crushed garlic and cook for 1 more minute. Add 1 diced mango, reduce the heat to low and cook for 10 more minutes. Add some orange juice, brown sugar, salt, black pepper, and finely chopped jalapeno pepper; cook for 10 more minutes, until orange juice is reduced, stirring occasionally. Remove from the heat and add some chopped mint.

Nice sweet flavours compliment the fish nicely, and the pepper gives it extra bite.
