What does it mean when a recipe asks for hot sauce? And what is a good one to add to a recipe when the recipe is pork chops with green bean salad?

It depends on what you're doing with it. I have several types of hot sauce in my house that I use for different things.

For green bean salad, if there's a vinegar base to it, and you really like the tartness try Tabasco. If you want something mildly hot, and have the natural sweet taste of the pepper, try Sriracha. If you want a little hot, more sweet, try Country Sweet Hot.

If you want something that has some fire to it, and a little bit of a garlic taste as well - I highly recommend Sriracha made in the US by Huy Fong foods. It can usually be found at Wal Mart and decent grocery stores. It's hot but its not a rude hot. More flavor than burn. Some hot sauces are just hot for the sake of being hot and have little flavor.

Hot sauce usually means Louisiana Hot Sauce (about 49cents). The cheap, smooth stuff. Maybe you can try tabasco.

do you like hot hot or mildly spicy? i like buffalo brand hot sauce -- its not that hot and has other flavor than just pepper. i dump a bottle of it in a pot of brunswick stew just to kick it up a bit. its kind of like spicy ketchup. try it if you don't want hot. of course if i am feeling like hot hot go with jamaican sauce like pickapeppa. yum.

there are so many hot sauces out there, choose the one you like the best! i like green sauce better, it has more taste
