Yes. But whether you put the lid on or not depends on how you want to cook the turkey pieces. If you don't want "evaporation"--that is, keep them moist with a sauce for example, you'd use the lid. If you want to brown them nicely first, (to keep in their juices) & then finish off without the lid, that's something else! Hope I helped a tad.
Edit: It's late, but I'm compelled to tell you something to make you laugh. I knew a guy who put a WHOLE FROZEN turkey in the oven. Set as high as he could, with the plastic bag of giblets still in it! I still laugh about that!

You can cook anything in an electric skillet that you can cook in a frying pan or in a sauce pan. I like an electric skillet because you can fry hamburgers or steak or any other meat that is going to sort of splash out spatters of grease and it doesn't land on the rest of the burners on the stove -- just on the kitchen counter which is very easy to then clean up. Also, for reheating foods, such as stew, if you turn the skillet on low to medium low, things heat up great and things don't stick to the bottom of the pan. They are great for spaghetti sauce -- simmer it and those ugly orange splatters aren't all over your stove and burners, but on the counter top, easily cleaned up. I am a grandmother and started using an electric skillet many, many years ago when I got sick of making hamburgers and having to clean the whole stove top. I am probably on my 5th one or so -- they tend to last for about 3 or 4 years, then the burner will not work or the finish is so worn off that I just buy a new one. Also, when you buy one, it will come with a small recipe book. And, if you google "electric skillet meals" you'll get a ton of results. I could go on and on about how great they are -- cooking bacon or sausage, the mess is just so much easier to clean up. Fried chicken is great. Eggs are easy. As I said, I could go on and on, so I'll just shut up for now!

yes you can cook a turkey any way you want to. most people cook it like its a giant chicken no matter how they cook it. people outside of the united states don't understand turkey because it is dry and bland. i think it makes good meatloaf.
