I don't know what it could be in our environment, but everyone, including my mother, my niece, who's 2, my dog, and myself, are all having problems with gas, bloating, stomach pains, and other symptoms over the last 2 years. We're not all eating the same meals either, so I don't know what could cause these chronic illnesses.

Seeing a common doctor, together may help find any physical causes and lead to a diagnosis. Also, has your family undergone any serious emotional issues. That could lead to all of you having digestive problems; even a dog will react to the evironment and feelings of those that care for it.
There are digestive diseases that run in a family. So if you all went together to see and talk with a gastro-interologist he/she may be able to find what is affecting your family.
Sadly one common thing found to affect famlies, is when a family moves into a Former Meth House, there are now cheap testing kits on the market, that work, that can allow a family to test their own house to see if it was a Former Meth House. Ask the neighbors, they may know if it was. Check the police department as well, they can tell you if they raided that house in the past and found meth being cooked there. So if you moved in the past 2 to 3 years into a new home, anyone in your family, whom you all spend at least a few hours a week at their house, this could also be the problem and is occuring more and more often.
Here in Utah where I live, there has been on the news at least ten cases in two years of famlies who bought a home and one at a time the family members became sick, then sicker and sicker, in a few families it took someone dying for the family to find out that they were living in a former meth house. This last time on the news, about a month ago. The kids were all seriously ill, the dad then became so sick he could not work. They found out they were living in a Meth house and the house was condemned by the health department. Sadly, everything they owned was contaminated and had to be left in the condemned house. I pray this isn't the problem, but it's a growing problem now days, so at least consider this if your immediate family or relatives purchased a home prior to you all becoming sick.

Have the gas company check for any small gas leaks in your house, especially if you are having headaches as well. Don't know what symptoms Radon leaking into the house causes, so you may want to google that.
Also, parasitic infections.... Mercury and lead levels in a blood test should be investigated.

It may be a hereditary illness, or like others said, it could be the water. Go get checked out, and buy a home kit to test your water for unsafe levels of lead, mercury and other chemicals. Do it asap!

Is there a common denominator? Maybe a Sunday dinner, a weekly luncheon somewhere? You might want to see a specialist on the matter.

i think it's a water problem. whatever source it is, always boil your water for drinking. purifiers are not enough, even bottled commercial drinking water is not all safe. check the local health department for safe commercial drinking water, or better, get a sample of your water and have it checked for E. coli content and other parasites.
