Here are two recipes I really like:

Lemon-Avocado Spread

1 ripe avocado (diced finely)
1/4 cup red pepper (diced finely)
cracked black pepper to taste
zest of lemon (grated)
Juice of half a lemon
1 tbsp fresh coriander (chopped)
1/4 tsp chili peppers (chopped) --> this is optional
1/4 tsp honey

Combine all ingredients in a bowl. Stir and mix thorougly. If you want a thinner spread, use a food processor.

Curried Avocado Spread

1 avocados
juice of half a lemon
1/4 teaspoon curry powder
1 tablespoon mayonnaise
Bacon bits to taste.

Peel and mash the avocados. Add the rest of the ingredients and mix thoroughly.

Ingredients

Simple Spread
1 oz ripe Fresh California Avocado
Add salt to taste
Garlic Spread
1 oz ripe Fresh California Avocado
½ clove of garlic, finely minced
Add salt to taste
Sweet Spread
1 oz ripe Fresh California Avocado
1 tsp orange marmalade
Add pinch of ginger to taste

Instructions

In a medium bowl, mash avocado with a fork.
Stir in desired ingredients.
Spread on toast and serve.


Nutrients per serving: calories 55; fat 5g (saturated fat 1g; polyunsaturated fat 1g; monounsaturated fat 3g);

protein 1g; carbohydrates 3g; dietary fiber 3g; cholesterol 0mg; sodium 0mg.

I usually just take really thin slices of Avocado, dip them in lemon or lime juice - just to keep them from turning brown, and add a little salt. Just let the fruit stand by its self.
