I'm planning to take my girlfriend away for an overseas holiday, hoe can I surprise her with it rather than tell her in the meantime? Will check she has valid passport in some way first.

If you mean a total surprise, like not telling her until the plane takes off......You can't totally surprise her with something like that. You've got to at least give her enough notice to get her "travel act" together. A girl can't just pick up and go overseas without the right stuff.
Maybe if you take her out for a nice dinner, and give her the ticket maybe hiding it under a plate or in her napkin or something.

Maybe she'd like to be involved in the planning or choosing where to go?
Surprise her with a dream get away of her choice?

If she has a job you kinda have to tell her b/c she's going to need to plan for it.I would just tell her anyway give it as a Valentine's gift or something,I myself would be thrilled if my man went out of his way to plan a trip to surprise me,but I would want to know a little bit ahead of time,a girls gotta shop for things to take w/ her,most girls just like to be prepared for everything...but you are such a sweet boyfriend!!

Consider that she might need shots first
Additionally, are you so sure there are no outstanding warrants or liens that would make her leaving the country problematic?

just tell her that you want the week or weekend free for only you and her time and blind fold her till you get to destination.
