Barbacoa is Spanish for Barbecue. So, think barbecue meets Mexican spices and rubs. You'll need a good pork butt, or beef tri-tip. Create a rub that includes salt, cumin, chili powder, fresh ground pepper. Cook it on the grill over a slow fire. Serve with pico de gallo or salsa.

Why sure! the hole in the ground is like a big weber. Just like some people cook a turkey in a weber, its just a matter of positioning your coals and adding coals from time to time. I have cooked tri tips the same way, you just line coals along both sides of the weber leave the middle open put your tri tip in the center put the lid on it and 45 -60 min later wa la!!!!
