I mean we can make new chocolate from ready made chocolate. we just change the formation. But I don't know how to do it. So if you know about it, plz let me know.

** I JUST READ YOUR UPDATE & I BELIEVE THIS IS WHAT YOU ARE ASKING FOR...

Here are four steps for how to use chocolate candy molds to make chocolates or chocolate candies:
1A. To melt the chocolate in your microwave: put 1 lb. of chocolate in a bowl. Microwave on half power for 1 minute, and then stir it. Repeat this process until the chocolate is mixed well, and fully melted.

1B. To melt chocolate in a double boiler: put it in the top pan & set it in the outer pan full of water. Heat on LOW (trying not to boil the water) and stir it while it melts -- a process that may take as long as 15 minutes, so be patient.

2. Fill chocolate candy molds by spooning the melted chocolate into the mold cavities. Then hold both sides of the chocolate candy mold and tap it lightly on your tabletop to remove air bubbles and to level out the chocolate.

3. Cool the chocolate: Put the filled chocolate candy mold into the freezer, which 'quick cools' it and may make a nicer, shinier surface. Small candies or bite size items will be cold enough to remove in about 5 minutes, but larger ones will take about 10.

4. Remove the molded candy from the chocolate candy mold. Turn it upside down and gently tap it on the table. The candy should easily drop right out, and be ready to eat or give away!

Chocolate Cinnamon Mud Balls

Original recipe yield:
18 servings

PREP TIME 15 Min
COOK TIME 10 Min
READY IN 25 Min

INGREDIENTS
2 cups sugar
1/2 cup water
1/4 cup whipping cream
1 tablespoon light corn syrup
1 1/2 (1 ounce) squares semisweet baking chocolate, chopped
1 teaspoon ground cinnamon
1 teaspoon vanilla extract
Pinch salt
2 1/2 cups semisweet chocolate chips
1 tablespoon shortening
1/2 cup ground nuts (optional)

DIRECTIONS
Butter the sides of a heavy saucepan; add the first five ingredients. Cook and stir over medium-high heat until sugar is dissolved. Cook, without stirring, until a candy thermometer reads 238 degrees F (soft-ball stage). Remove the heat. Cool, without stirring, until mixture reaches 110 degrees F. Transfer to a mixing bowl; add cinnamon, vanilla and salt. Beat until light-colored and stiff enough to knead, about 2 minutes. Lightly grease hands; knead mixture in bowl for 2 minutes or until smooth. Roll into 1-in. balls; cover and freeze for 20 minutes. Melt chips and shortening; dip the balls, shaking off excess. Roll in nuts if desired. Place on waxed paper-lined baking sheets to harden.

If I'm understanding your question right, you are talking about taking the cocao beans and adding the sugar and all that and actually making chocolate, as opposed to a recipe using chocolate to make homemade fudge or brownies or something like that.There is alot of processing that goes into making chocolate. It would be very difficult to make it yourself. Chocolate goes through a fermentation process and well, like I said, is not something you could do in your kitchen with a mixing bowl.

For the choclate coating it is melted chocolate with a bit of parafin melted in to make it shiny. Chocolate is tricky to work with - you can safely add a bit of parafin or butter for the shine but adding sugar or much else is going to make it seize up and get gritty. If you want coloured chocolate there are wafers that come in colours - but the colour does not add flavour. In fact those are often white chocolate with dye. White chocolate is not really chocolate just the cocoa butter. So if you want chocolate - just use semi sweet or sweet chocolate squares or chips add a bit of parafin (wax). Also be careful to melt your chocolate over hot water just til it is melted. If cooked too hot or moisture gets in it will seize. As a beginner I do not advise you adding anything other than a bit of parafin or butter or shortening to make it a bit softer and shinier.
