You can buy an egg poacher, it is a small pot with little cups for the eggs. You butter these and put in the raw eggs. The cups sit above the boiling water in the cups and cook. I make them withoug a poacher. I boil water in a small frypan or pot, add a little vinigar to the water which helps coagulate the eggs and keeps them together. Crack the eggs in a saucer or shallow dish, bring the pot of boiling water just off the heat and slip the eggs in. Return to the heat and bring to a slow simmering boil unti lthe eggs are done. Just a few minutes two or three for soft and about four for hard yolks.

Bring a shallow pan with about 1 cup water and a pinch of salt to a gentle simmer.

Gently break your eggs into the simmering water. Spoon the water over the tops of the eggs to help the eggs cook evenly. Move very slowly as disturbing the water causes the whites of the egg to swirl and you get a "ratty" looking egg.

I've hear people claim that a bit of vinegar.. about 1 tablespoon into the water will help the eggs keep their shape. Personally, I don't like the flavor the vinegar adds so I'd rather have messy poached eggs.

They sell egg poachers at kitchen ware stores. They sit in your sauce pan and hold the egg in some cup shaped device as it's poached so the whites stay neat and round and you get a very pretty egg. Very nice for Eggs Benedict.

Having poached thousands of eggs in my still relatively new culinary career, I have seen a number of methods.

Using a medium sauce pan, add 1 tablespoon salt and 1tablespoon of plain vinegar. Bring liquid to a rapid simmer, but not a full boil. Turn down heat to medium at this point, and add eggs 1 at a time. The BEST way to add your eggs is to crack them into a shallow bowl or coffee cup so that you do not add any shell to your eggs. Shell = High in calcium, low in taste. Gently stir the liquid ensuring that you cover all of the yolk with the white.

The other method I have seen which worked wonderfully and is delicious is more of a take on Shiired eggs. Butter the inside of a wide, shallow coffee cup or ramekin. Crack two eggs into the cup and reserve. In a wide sauce pan that is deep enough to hold the cup and accept a lid, bring your water up to a high simmer (again, not a boil). Place the cup into the pan, cover and cook to desired doneness.

Hope this helps, and enjoy.

Everyone is leaving out one very important step. Add a capfull of vinegar to the boiling water. This will make the egg coagulate in the water so it won't just swirl around into one big mess. Then crack your egg into a small bowl and gently slip it into the boiling water. Let it boil for a few minutes, take out with a slotted spoon and voila!

The simplest way is to fill a frying pan with water then put a dash of vinegar in it.... Bring to a boil then crack the egg and drop in.... Using a large serving spoon or slotted spoon gently turn 1/2 way through.... What is 1/2 way through?... Depends on how runny you like the yoke.... I like real runny so 1/2 way is about 90 seconds...

Boil your water first, get it good and hot, drop a teaspoon of vinegar in it. Take an egg and crack into a bowl first then put it in the boiling water, when it comes to the surface it's done.

The quickest way is to use a standard coffee cup. Crack open an egg and put it in the cup. Poke the yoke with a fork. Microwave for 23 seconds.
