The easy way is to take a gallon of local, natural cider (try to find something that's NOT loaded with preservatives), tap a packet of brewers yeast into the jug, fit a balloon around the neck and leave it in a dark corner or closet. Keep it at room temperature and check the balloon every now and then. Replace the balloon before it pops, and when it stops inflating, filter, chill, and enjoy.

Hard cider is simply fermented cider. Although not an expert on this topic, I believe that brewer's yeast needs to be introduced to the cider and heated to start the fermentation process. This isn't anything that you can simply leave out on the counter as you can make yourself quite ill by mishandling foods. Sorry I can't be of more help.

The quick and dirty is that you add brewing yeast to preservative free apple juice. You let the yeast eat the sugars and convert them to CO2 and alcohol (this is what "fermentation" is).
After about 2 weeks, siphon the clear cider off the sediment that falls to the bottom. Let it sit for another 2-6 weeks and then bottle and/or drink.
