Keep the temp about 350 F. Pre-heat oven, and don't have the racks to close to heat source. Keep an eye on the bread and tap loaves with a finger...when they sound hollow, take them out. Turn bread onto cooling racks ASAP and that way they won't continue cooking in the pan.

Maybe your pan isn't distributing heat properly. Make sure you use a good, heavy pan, not one that's made out of aluminum. Test your oven with an oven thermometer - maybe your preheating sensor isn't working properly anymore. Clean your oven - sometimes if there's a bit of buildup, it throws off temperatures or causes the oven to get smoky. If you have a pizza stone, throw it on the bottom rack during preheating, then put the bread on the upper rack - this will hold more heat and keep the element from turning on as long. If you're making a really sugary and oily/fatty bread, it's near impossible to keep the bottom from browning (or blackening, as the case often is...). If it tastes good, though, I'd say it was a success!

You may be leaving it in too long or setting the temperature too high. Oven temperatures vary, and yours may be higher than you realize. Try lowering the temp by 25 degrees.

If you use a glass or dark metal bread pan, the baking temperature should be lower than the recipe specifies -- again, about 25 degrees will make a difference.

Keep the pan around the lower-middle of the oven. The heat will rise around it, and cook the top instead of the bottom.
Pies on the bottom, cookies on top and bread in the middle.

Lower the temperature in the oven.
Raise the level of the rack ie; get the bread more towards the middle of the oven.

Do not use a dark-colored pan; use a light-colored or shiny pan

Be sure your oven is preheated before adding bread

Be sure your oven is calibrated correctly. Put an oven therm. in there adn check it against the setting.

place in oven upside down...you might risk burning the top then
