cut the cheese into strips...dip into egg mixture, then dry, then egg and dry. Carefully deep fry, but not too hot. If the oil is too hot, or too cool it will just wreck it. Good luck, but they are a bear to make. Might try to buy the ones you just have to heat.

The basic recipe is strips of cheese (use low moisture) flour for dusting (shaking them in baggie with flour works well) beaten egg for dipping after the flour and bread crumbs for the crust.
The egg will hold the bread crumbs on and it's best to double dip em in the egg and bread crumbs so you get lots of coating to keep the cheese in. If you find any bare spots patch em up.
Make sure your oil is very hot. If you have a deep fryer turn all the way up. If using a pan to fry heat the oil as hot as you can but not smoking hot. You don't want a grease fire!
Fry them all at once if you have room because they only take a couple of minutes. As soon as you see cheese starting to poke out they are done. Keeping the oil hot and evenly heated will allow the bread crumbs to cook before the cheese escapes.
Oh! Before you start cut your cheese into strips and freeze it for about an hour and then start assembling. Thanks above.

homemade fried mozzarella sticks'
INGREDIENTS
2 eggs, beaten
1/4 cup water
1 1/2 cups Italian seasoned bread crumbs
1/2 teaspoon garlic salt
2/3 cup all-purpose flour
1/3 cup cornstarch
1 quart oil for deep frying
1 (16 ounce) package mozzarella cheese sticks
DIRECTIONS
In a small bowl, mix the eggs and water.
Mix the bread crumbs and garlic salt in a medium bowl. In a medium bowl, blend the flour and cornstarch.
In a large heavy saucepan, heat the oil to 365 degrees F (185 degrees C).
One at a time, coat each mozzarella stick in the flour mixture, then the egg mixture, then in the bread crumbs and finally into the oil. Fry until golden brown, about 30 seconds. Remove from heat and drain on paper towels.

I find this to be the easiest was. Instead of sticks cut the mozz into triangles, One square piece of cheese yields two triangles when cut in half. Heat oil to 325 degrees. First dredge cheese in flour then, beaten egg, then seasoned bread crumbs. This should be fine, but you can also redip in egg and then bread crumbs again for thicker crusted. It should take about 3 or minutes in the hot oil..

Just follow what the other people are saying but make sure you put the cheese in the freezer before you cook them. If you dont all the cheese will just melt out of the bredding. If you freeze it the cheese stays in.
