Oh gosh... I'd use buttermilk before soy milk!

I'd say it depends what cheese you're using. I might use soy milk if it's something mild that the tart buttermilk taste might clash with. If you're using a boxed mac and cheese.. i'd go with soy too. Any dry milk in the house that you could reconstitute?

Buttermilk is sour, soymilk is more sweet. Which do you prefer your mac N cheese taste like? I would use soy myself (as long it's plain).
