Both depending of Who you Believe!

To cook Duck first remove all Excess Fat from the Skin! I often cook my duck on a Rack in a 350-degree oven with Onions and Garlic stuffed in the internal cavity.

IF you need stuffing, cook it separately and not in the Duck!

I make an ORANGE Sauce with Orange Zest and Orange Juice, Olive Oil and Corn Starch!

Yes, they do. They're birds. Just look at the whole chickens in the grocery store. They have a back bone, and the rib bones come down off of it.
