Be sure to use only young, tender leaves, not the big old hard ones.
And sugar is all I know. Maybe add a couple tsp. to it.
Also sprinkle on some pepper-vinegar before eating.

A little salt will counteract the bitterness. Try to add it while you're cooking it so that you get the maximum effect from a little bit. Start with 1/4 to 1/2 tsp and go up from there.

First, boil water and toss the greens in. Boil 'em for two minutes, pour off the boiling water and cover 'em with fresh cold water and bring 'em back to a boil. After another couple minutes at the boil, they'll be ready to serve or to add to whatever else you're cooking and the bitter taste will be gone.

Bitterness is part of the attraction. It adds a taste of "richness" when combined with salt, and cooked cannelini beans - with sausage if you like. Eat them more and the bitterness will begin to grow on you.

I add wine, which reduces to sugar.
Mom adds sugar.
Also, are you boiling them in water or salt water? That will hold that bitterness in.
Greens, like spinach, produce their own water when cooked over low heat. Next time, don't add any water to the pot. The greens will come out tender (still add the sugar or white wine).

i remember watching giada delaurentiis say that you should blanch them first because it helps take some bitterness away.
i personally like that taste when i am in the mood for mustard greens.
