Does anyone know how to make Southern Backed Mac and Cheese, I would love to hear your recipes!

Creamy Mac 'n' Cheese with Tomatoes
Prep: 15 min / Cook: 30 min

1 pound elbow macaroni
2 tbsp vegetable oil
4 scallions, coarsely chopped
1/4 tsp salt
1/4 cup all-purpose flour
4 cups low-fat (1%) milk, warmed
2 tbsp Dijon mustard
2 cups shredded reduced-fat sharp cheddar cheese
1 cup shredded reduced-fat Monterey Jack cheese
1/2 cup grated Parmesan cheese
1 medium carrot, peeled and coaresely grated
2 tomatoes, cored and sliced
1 cup fresh whole-wheat bread crumbs

1. In large pot of lightly salted boiling water, cook macaroni until tender, following package directions. Drain well. Return to pot.

2. Meanwhile, in large nonstick saucepan over medium heat, heat oil. Add scallions salt. Cook, stirring, occasionally, 3 minutes. Gradually stir in flour. Cook 1 minute. Gradually stir in 1 cup of the milk until well blended, with no lumps. Gradually stir in remaining milk. Bring to a boil. Lower heat. Simmer, stirring, until lightly thickened, 2 to 3 minutes. Remove from heat. Stir in mustard. Stir in cheddar, Monterey Jack, and 1/4 cup of the Parmesan.

3. Preheat oven to 375 deg F. Lightly coat 13 x 9 x 2-inch baking dish with nonstick cooking spray.

4. Fold carrot and cheese sauce into macaroni. Scrape into prepared baking dish. Srrange tomatoes in single layer over top. Combine remaining 1/4 cup Parmesan and crumbs in small bowl. Sprinkle over tomatoes.

5. Bake until filling is bubbly and topping is lightly browned, about 20 minutes. Let stand 10 minutes before serving.

I'm not sure what you mean by "southern." As a southerner, it's all mac & cheese to me!

Now, the question is, do you want a custard-style M&C, where there is egg in the mixture then it is baked and firms up? Or do you want once where a white sauce has cheese added to it and that is stirred into pasta, and can be baked or not after that?
I like mine w/o the custard, so heres my recipe.


~~ Baked Macaroni & Cheese ~~

½ cup heavy cream
½ cup milk
3 Tbsp butter
2 Tbsp flour
1 lb. macaroni, boiled al dente, according to pkg. directions
1½ c ups yellow cheddar cheese
1½ cups Muenster cheese

Heat the milk and cream together in microwave. Melt butter in large saucepan, then add all the flour stirring constantly. Let cook for 4-5 minutes, continuing to stir. Remove from heat and add warm milk and cream while whisking -- if sauce is too thick, add a touch more milk. Add cheese to white sauce and stir. (Save a bit of cheese for the topping.) Stir sauce into macaroni and place in a buttered casserole dish. Place in 350° oven until slightly brown and bubbly on top -- 25-30 minutes.

First make the mac and cheese. Use elbow mac and cook for about 7 minutes. Taste to be sure it is done. Then mix velvetta with it. Heat the velvetta in microwave for about 3 minutes and get nice and soft. Add the elbow mac to the cheese. Heat for a couple of more minutes. Be sure all the cheese is melted.

Place the mixture in a oven safe container. Now place a layer of extra sharp cheese on top. Now bake at 350 until the top is got a little brown. This will be pretty good.

It is one of the family favorites. I think the best thing to do is to use a variety of cheeses when you make it. I like to do gorganzola, jack, cheddar together but other combinations work well too.

I usually make large amounts so my recipe really would be too much for you. Just make sure you cook the macaroni al dente so that when you bake it, it doesnt end up mushy. Use evaporated milk and real butter along with a bit of salt, pepper, onion and garlic powder to taste.

You can also use the lower fat milk, margarine, etc, if you are concerned about calories.

What is it? Is that with extra cheese, sour cream, butter, sugar, marshmallows, peanut butter, ham, bacon, or grease? I dearly love the south, and many Southerners, but good golly, their recipes read like heart attack on a plate. It's the only place I've found cream-filled-honey-dipped-chocolate-frosted pastries (that's all one item, for those of you who can't believe it). That's for a breakfast snack, with a nice cold RC cola or Budweiser.

Check out food.com, then look for Paula Dean's recipes, she's a great southern cook! I have her cook books and a few of her magazines. I've even been to her restaurant in Savannah, GA. GREAT!
