I am really feeling crappy and hungry but I don't have the energy to make anything huge. I have a cold and I wanted to know if anybody had some recipes for little snacks for something to comfort me?

Well my mother was a nurse and these are the things she would make for me and they all went down smoothly. Chicken soup--the salt in the soup is soothing to irritated throats. Juice mixed with water, jello, saltine crackers spread with a thin coat of butter--I don't know why but this is the best when you are just beginning to mend! Popsicles, clear soda, weak tea. Basically if it was a liquid and not too highly colored she gave it to you! The tea is the only dark thing she fed me but that was for the soothing effects of tannic acid?

Today when I'm on the mend I have a special recipe I love and it's not too hard. Put 1 lb of brown lentils (rinsed and picked of course), 2 chopped carrots, 2 chopped celery sticks, 2 cloves of minced garlic, and 1 can of diced tomatoes in a pot. Cover with 2 inches of water and add 1 tsp of salt and 1 tsp of dried thyme. Cover and cook slowly until the lentils get soft. It takes less than one hour to cook and you can stop and rest occasionally if you're really weak. This is so nourishing and I feel so full of nutrients after I eat it. I would eat the whole pot myself but my husband and kids make me share. I'm not a vegetarian or anything but when we were first married I made this once after we had a bout of stomach flu--it was about all we had left in the house and I was amazed at how tasty it was on our sensitive stomachs. I became a big believer in it after I saw how it perked up our whole bodies.

I know this recipe sounds like a LONG one but i promise its not and it is also full of carbs so it will give you energy too.

Zesty Bean Soup

1 tablespoon olive oil
6 oz sausage, cut into small pieces
1 medium onion chopped
3 cups chicken broth
3 cups water
1 can (15oz) red kidney beans; drained and rinsed
1 can (15oz) great northern beans; drained and rinsed
1 can (14 1/2 oz) diced tomatoes
1 large potato, scrubbed and diced
1 large carrot, peeled and thinly sliced
1/2 teaspoon dried oregano

1. Heat oil in a large pot over high heat. Add the sausage and onion and cook for three minutes, stirring occasionally.
2. Add chicken broth, water, both types of beans, tomatoes (with their juice), potato, carrot, and oregano. Cover and bring to a boil. Remove the cover and simmer on high for 10 minutes or until vegetables are tender. Stir occasionally. Serve Immediately. Takes about 20 minutes to cook and 10 minutes to prep. total of 30 minutes - easy meal if you ask me!

If you have chicken broth or beef broth, you cook caramelize some onions in a pot with some butter and then add the stock for a quicky version of French Onion soup. Make some toast to accompany.
A little splash of Balsamic Vinegar in the soup will give it a nice extra kick.

Soft boiled eggs with toast and butter.

Saltine crackers with cheese.

Something salty, like Campbells chicken noodle soup.
You need the liquid and salt because you will be sweating a bit during the healing process.

chicken soup and o.j. and honey and lemon for your throat and a box of very soft tissues and fuzzy socks and a teddy bear to watch over you while you rest.
