My grocery store has chile manzano. (They're quite a large roundish chile that is yellow or orange.) Does anyone have a recipe -- for salsa or anything else -- that uses these? And how hot are they?

I only seem to have one cookbook that even refers to this unusual-looking, rather attractive chile that is not common in the U.S. It's "My Mexico" by Diana Kennedy. It says the chile manzano is "terribly hot" and is popular in Michoacan where it's chopped up with peaches to make a salsa. She doesn't actually give a recipe. I guess maybe I would try chopping it up with peaches, red onions or scallions, cilantro and lime juice and wrapping it up in a tortilla with some grilled meat, grilled chicken or fish....Any other ideas or recipes for the chile manzano?

No... Their are great recipes for the red/black wrinkled chiles.
Cut open three chiles and take out the seeds.Bring them to a boil with three cups of water.Let them simmer for about 10 minutes.Drain the juice in a small bowl and reserve.Put the cooked chiles onto a blender and mix. Place 3-5 pork chops in a 10 inch pan and place chile blend with reserved juice and flavor with salt and pepper. Cook for 15 minutes on each side.
Maybe this works with the other chiles not to sure.

Buy one and taste it and make up a recipe.
