Is sake like wine that it's OK to drink after it's been opened, just doesn't taste as good? And does the unfiltered part make it less drinkable...ie can it go bad?

I'm a big fan of the unfiltered Sake's and from experience left in the fridge after being opened, but resealed, it will usually last a few weeks. Note though I have had certain ones turn after a week and half. Some get a really sour note to them and some just taste flat, without any of the original characteristics.

I guess that it works like the grape wines, except that the process is slower. I opened a bottle of Sho Chiku Bai Ginjo, and drank about the half. The remains were kept in the fridge for about two weeks or so, and by the time it was drank again, this sake was like 60% of its original richfullness. Banzai !

sake should be drunk at room temp it will stand for a short time but is much better when fresh
