Voy a la playa, hago windsurfing (same word in English/Spanish) y como helado/nieve de vez en cuando. Fui a España.
Also:
Durante mis vaciones fui a España. Visite la playa, hice windsurfing y comi helado/nieve de vez en cuando.

If the sentenses refers to the last (past) vacations the translation have to be like this:
Que hiciste durante las vacaciones? Adonde fuiste?
Fui a la playa, fui a surfiar y comi helados. Fui a España.

Well -- pues/bueno Like I said... -- Como [me/te/le/nos/os/les] dije... Which is bad/good -- lo que está bien/mal. Kind of -- Más o menos Anyway -- de todos modos/por lo menos. [usually means atleast, but I think that in this case, that's what you're going for]

you wrote all the verbs in present except comí which is past tense. the verbs need to be parralel. i you want to say i went you need to say: yo fui a la playa....etc. you're doing well!! chao!
