This is really good and simple. Put the fish in a baking dish. Spray it with spray butter (the fish) sprinkle garlic-pepper-salt lightly over it. Then chop up lots of onions and celery to put on top. Bake as usual. It is to die for!! Also very good with pollock and tilapia

Lemon Broiled Orange Roughy
Ingredients:
3 tablespoons lemon juice
1 tablespoon Dijon mustard
1 tablespoon margarine, melted
1/4 teaspoon fresh coarse ground black pepper
4 orange roughy fillets (each fillet should weight 4 ounces each)
lemon wedges
In a small mixing bowl, stir the first 4 ingredients until well blended; divide mixture in half.
Place the fish fillets on a rack of a broiler pan that has been coated with cooking spray.
Brush fillets with half the lemon juice mixture.
Broil 5 1/2 inches from heat (with electric oven door partially opened) for 5 minutes or until fish flakes easily.
Drizzle with the remaining half of lemon juice mixture.
If desired, sprinkle with additional pepper and some salt; serve with lemon wedges.

Bake your orange roughy as normal.
While it's baking, make the following sauce:
Put 1 tablespoon of olive oil in a 10" fry pan
Add a package of raw, sliced mushrooms (wash them first)
Put a bit of salt on the mushrooms to prevent them from leaking
Add 1/2 cup of white wine
Stir constantly until the mushrooms have shrunk.
Put on top of the fish.

Take Mayo - I use Fat free -but you can use any kind you like
spread over the fish (thin), add salt and pepper to the top
I take thinly sliced up onions maybe a 1/5 of an onion (I like using red onion - but any onion will work) - mix that with mayonaise - to get a good coating - put them on top of the fish while its baking - the last 5 minutes I put put the fish to broil - so the onions and the top of the fish get browned -Yummy.
The may brings a nice taste (doesn't taste like mayo in the end - promise)
