The second e makes it feminine - thus a fiancee is female and a fiance is male. Both should have an accent on the first e.

Fiance is for males who are engaged to be married. Fiancee is for females who are engaged to be married. In French, adding an extra e makes something feminine ( there are exeptions), but words fiance and fiancee are from French origin.

This is a French word, if you're a man referring to your female partner you would use "fiancee" and if you're a woman referring you to your male partner it would be "fiance".
mon fiance = masculine form
ma fiancee = feminine form
