Things like water at the top of the waterfall, a compressed spring, a stick of dynamite or a fully charged battery. Anything that has energy that could be released.

It's kind of a vague definition of energy since there are a variety of forms of energy present in any system at any given time. The electrical charge in a battery, a bowling ball lifted over your head where you could drop it at any time, a coiled spring... also, since any atom in an object could be split under the right circumstances, there is nuclear energy tied up in there.
So, I would say mechanical, electrical, chemical, and nuclear are all candidates for potential energy.
