I agree that you need to have a heart to heart with Dad, then the two of you need to talk to your son together.
My husband and I plan a menu every week. He mentions meals he'd like (he also helps cook) and I do too.
As far as our boys go (they're 2 and 3), they pretty much like anything we make. There are a couple meals we've tried more than once that they both did not like hands down. So, we just don't serve it. Or we'll make it for us if we really want it and give them something else.
The key is to not give your son too much control, but respect his tastes. But remember YOUR the mom and if you do the cooking then there's going to have to be some sacrificing by the guys.

Wow -- Dad is setting a really bad example!
There are many, many foods that my son (grown) dislikes, but he will eat them whenever around the kids so they can experience everything and then they choose meals that everybody likes.
The only way that I can think of to 'satisfy' everyone is to make ONE MEAL -- if they are hungry, they eat. If not, they will be next meal. You are going to need to sit Dad down and have a heart to heart talk.

have you tried meatloaf? most guys like meatloaf and your son might like the flavor and not even snap that it's ground beef..? most kids love meatloaf..
i think you need to sit these guys down and explain to them that you can't be making 3 different dinners each night, so they're going to have to open up and work together to make dinner time possible and easier on you.. or i'd go on strike...

Tuna Casserole. Except you can use canned chicken instead of tuna.
Noodles
Canned Chicken or Tuna
Cream of Mushroom or
Cream of Celery
Peas or cut up celery soft celery is you use cream of celery
My daughter is a picky eater but this is her fav meal.

well if they both like pork maybe you could try real corn beef not the caned type and may-be cook some cabbage with it and see if they will try that.
