Cornish game hens. Cheap and easy.
Preheat oven to 350.
Make a paste out of minced garlic and minced basil (the amount of each depends on the amount of hens, make more than you think you need because you can save it in the fridge), with a bit of olive oil. Smear paste all over the hens. Salt and pepper them generously. Put them in an oven bag. Drop a large spoonful of apricot jam onto each hen, try to keep the jam on top of the hen as you manage the bag closed, into a shallow baking dish and into the oven.
the jam melts into the pasted and the flavors meld throughout the birds. Serve with anything you want, over a plate of julienned and steamed red, yellow and green peppers is pretty and tasty and good for you.
Bake for an hour, remove from bag onto rack and back into the baking dish, back into the oven for about 5 minutes or until golden all over (if necessary).

Maidrites. 1 lb hamburger & a medium onion cooked, grease drained, & then simmered in 1 can of chicken gumbo soup for about 20 minutes or so. Put the mixture on a nice bun & there you have it. I add french fries baked to perfection on a baking stone for a side dish.

My favorite is macaroni & cheese with either ground meat, chicken, sausage, or tuna mixed in. Very quick and easy and yummy!
**OR**
Angel Hair Spaghetti (cooks in 3-4min after water boils)
with some Prego Sauce.....**Hint**While water is boiling, add a pinch of salt and a cap full of cooking oil so the pasta doesn't stick. And after you drain the pasta mix in some butter for flavor and so it doesn't stick itself.
**OR**
Buy some ready made tortillas and warm them up. Cook some ground beef with onion, salt and pepper for flavoring. Add some shredded cheese, lettuce, tomato on top and you've got yummy tacos

Any type of leftover meat (chicken, turkey, beef, pork) -- no matter how it was prepared -- can be chopped up and mixed with salsa, then spread on a tortilla. Topped with cheese and toasted under the broiler. . .mmmm!
