Probably a Staffordshire Bull terrier

The Old English was used in one film I think - but they are less aggressive than the Staffie that was one of the breeds used to develop American pit-bulls. Their huge muscular jaws 'lock' onto their 'victim' and almost immovable without a stilletto heel thro the brain.

The Old English has sometimes got a poor rap as a result of confusion with the Staffie, whereas they are much more mild-mannered generally (although come out of the same stock way back).

Mind you Staffies are also lovely dogs if sometimes excitable - as with all dogs they generally only get as aggressive as they are 'made' to be by weirdo owners - typically a well brought up one is very loyal and placid.

Bill Sike's dog was just described as 'white coated with red eyes'. This could typically describe a white bull terrier which can have an albinoid appearance with very red/pink eyes. The Fighting dogs used to bait bulls, bait lions and ultimately fight each other wrer more likely to be from the Staffordshire side - they are well known to have a strong fighting instinct and their jaw conformation makes them a more likely fighter than an Old English. They were quite common in the 1800's in England and would most likely be the sort of companion that 'Sikes' would have - just as the Bill 'Psychos' or Bill 'Sickos' of today have refined the fighting breed and still indulge in this disgusting occupation - hence the occasional terrible mishaps with youngsters as per the other week in the news.

Whilst always potentially likely that a territorial Staffie will fight another dog - a well handled and bought up Staffordshire is a loevely animal. The Old English, which has for most of its line been a show dog rather than a fighting dog - is more stolid and calm, and less likely to be the aggressive beast of the Dicken's novel.

Bulls Eye was a beautiful English Bull Terrier I have two and their the best most loyal and affectionate dogs Ever.

In the film it was an English Bull Terrier, however in the books the dog was originally a "Staffy"
