My mom wants to know.
And I can't think of anything.
So, make a list and i'll make who ever gives me the best idea the best answer

Mixed salad. Raspberry dressing.

Stir Fry:
1/3 cup mango chutney
2 tablespoons low-sodium soy sauce
1 tablespoon dry sherry
2 teaspoons dark sesame oil -- divided
1 pound pork tenderloin -- cut into 1-inch strips
4 cups broccoli florets
1 tablespoon water
2 cups fresh bean sprouts
2 cloves garlic -- minced
1 can (8-ounce size) sliced water chestnuts -- drained
Combine first 3 ingredients; set aside.

Heat 1 teaspoon oil in a nonstick skillet over medium-high heat. Add pork; stir-fry 3 minutes. Remove the pork from pan with a slotted spoon. Add 1 teaspoon oil, broccoli, and water to skillet; stir-fry 5 minutes. Add chutney mixture, bean sprouts, garlic, and water chestnuts; stir-fry 2 minutes. Return pork to skillet; stir-fry 30 seconds.

OR

Reuben Burgers:
1 pound ground beef
1 can (4 1/2 oz size) corned beef spread
1/4 cup onion, finely chopped
1/4 teaspoon salt
1/8 teaspoon garlic salt
1/8 teaspoon pepper
1 can (8 oz size) sauerkraut, drained
5 Swiss cheese slices (3"x3" size)
5 pumpernickel or rye buns

Directions:
Mix all the ingredients together except the sauerkraut and cheese.
Shape mixture into patties, each about 3/4-inch thick.
Set oven control to broil or 550 degrees F. Broil the patties 4 inches from the heat, turning once, to the desired doneness, about 10 to 15 minutes.

Ground beef with Mexican seasonings
refried beans with a small can of green chiles mixed in with it.
grated cheese
sour cream
shredded lettuce
corn tortillas heated in oil and drained on paper towels
picante sauce
sliced black olives or green whatever you like
green onions chopped
Brown meat in frying pan and drain off fat. Add spices cumin, chile powder, salt and pepper and a 1/2 cup of picante sauce.

Assemble all the toppings before you start cooking the tortillas.
Heat about 1/2 inch of vegetable oil in frying pan and place one at at a time one corn tortilla and flip over it will get bubbles on the top . cook for just a few minutes. then drain on paper towels.

On serving plate place one tortilla, ground beef, refried beans, grated cheddar cheese or jack cheese, lettuce and sour cream and olives....and dash of picante sauce or salsa...

the flavors are great and it's something you can do in a short time. Gotta go do the dishes....enjoy!

you could have chicken tacos
take chicken breasts and chop into bite sizes
cook and add a packet of taco seasoning and some water finish cooking and put on taco shells! add whatever toppings youd like lettuce cheese onions and etc. its yummy!
