Mississippi sweet potato pie

4 ounces butter, softened
2 cups cooked and mashed sweet potatoes
2 cups granulated sugar
1 small can (5 ounces, about 1/2 cup plus 2 tablespoons) evaporated milk
1 teaspoon vanilla
3 eggs, beaten
1 1/2 teaspoons cinnamon
2 prepared pie shells, unbaked

Mix butter, potatoes, sugar and evaporated milk until well blended. Add vanilla, eggs, and cinnamon; mix well. Pour into the prepared pie shells. Bake in a 350° oven for about 1 hour, until set.
Makes 2 pies.

SWEET POTATO PIE
1 large can yams
approximately 1/2 cup pineapple juice
1/4 cup butter
1 egg, slightly beaten
1/4 tsp. salt
1/4 tsp. cinnamon (add more to taste)
large marshmallows
graham cracker crumbs
Preheat oven to 350°F. Drain and mash the canned yams. Mix in all of the other ingredients (except for the marshmallows and cracker crumbs - they are your pie toppers). Mix the pineapple juice in to your liking. When you are satisfied with the mix, pour into a baking dish. Take the marshmallows and push them in all around the edge, let the tops stick out. Take your cracker crumbs and sprinkle them in the middle. Place the dish in the oven and let cook - uncovered - for about 30 minutes.

QUICK Sweet Potato Pie

3 large potatoes
pie shells (found in frozen foods)
1 stick butter
1 tsp vanilla
2 cups sugar
2 tsp nutmeg
1-2 tsp cinnamon
1 can milk (evaporated)
5 eggs
pinch salt

preheat oven 350 degrees
boil potatoes until soft enough to mash...put in everything except eggs (that way it will be ok to taste while mixing to add more sugar or cinnamon according to personal preference) add eggs once mix has cooled completely and lightly toast pie shells for 5 mins or so. fill shells with potato mix and
bake 45-55 mins
makes about 3 pies!!

i made it for the first time this past thanks giving and i was very proud of myself! it was really good and easy!
