la fermiere means=A method of preparing braised or pot-roasted meat, garnished with carrots, turnips, celery and onions cooked very slowly in butter. So add the pork chops and there you go!!

'fermiere' is a generic French term referring to 'as on the farm'...
and there are a number of recipies using the term for not only pork.
