I have a beautiful salmon filet here and I'm snowbound, so no trips to the store, but I have the time and energy to do a little creative cooking today. Any good recipes?

Broil.

(1) REAL SIMPLE...
Drizzle with olive oil, add tarragon. Place in the oven 8" from the broiler top element, skin side down. Cook for 12 - 14 minutes without flipping until golden brown.

(2) EASY...
Atlantic Salmon
1/2 cup Cilantro Leaves, finely chopped
1 Tbsp Olive Oil
1 Garlic clove, large, fine chopped
1/2 tsp Salt
2 Tbsp Lime Juice

Combine cilantro, garlic, lime juice, oil and salt in bowl. Reserve 2 tablespoons. Pour remainder over fish in bowl. Let stand, covered, 10 minutes. Spray broiler rack with nonstick cooking spray. Place salmon on rack. Brush with 1 tablespoon of marinade. Then broil 6 inches from heat for 3 to 4 minutes. Turn steaks over. Brush with remaining tablespoon marinade. Broil 3 more minutes or until cooked through. Serve broiled salmon with thin lemon wedges.

Cook on the BBQ with a 24-hour soaked cedar plant.

My grandmother used to make the most phenomenal salmon in the dishwasher. I know it sounds odd, but it was steamed to perfection and was a real show stopper for parties. She used to run a load of dishes at the same time for extra impact, but I don't recommend it unless you've tried it before.

For Mima's Dishwasher Salmon, you'll need:
Salmon Filets
And for each filet:
- 1 Tbsp. Butter (Margarine or Olive Oil work well too)
- 1 Tbsp. lemon juice
- 1 tsp. dill (or other herbs like rosemary)
- salt and pepper

Cut a square of tinfoil. Place one salmon filet on the tinfoil. Add the butter, lemon juice, dill, salt and pepper on top of the fillet. Fold up the tinfoil and wrap down the edges to form an airtight packet as possible. Repeat for each salmon filet. The recipe is otherwise super simple, but this step is crucial. After all, you don't want dishwater infiltrating the package!

Place packets on the top rack of your dishwasher. Turn the dishwasher on to the normal setting - not energy saver, economy or cool dry - and let it run the full course. You need a full, hot cycle with a heated dry to properly cook the salmon. My mom and I tested this a lot to be sure our dishwashers worked for it, and we found that as long as the dishes came out hot after the full normal cycle (all the ones we've tried do) the fish was cooked to a perfect internal temperature.

You can always add a sauce at the end, like a hollandaise, but I think the taste of this is simple and lovely as it is. Also, if you don't have a dishwasher, you can bake the packets at 400 degrees Fahrenheit for 10-15 minutes, (I have a similar recipe for baked salmon done this way), but that takes all the fun out of it in my opinion.

We eat a fair amount of salmon here (Atlantic Coast)...
Rinse in cold water. Pat dry on paper towel. Rub some oil (preferably olive) all over. Rub on some corriander ... or even just pepper... Fry in light oil or bake in an oiled pan (skin down) for maybe 45 minutes at 350ºF - depending on fillet size... try not to overdo....

or

In a large piece of aluminum foil, add butter and a fair amount of water, salt + pepper and whatever other flavouring you like... place fillet in water/butter and fold it up, making sure most water stays inside. You can also add butter to the top of the fillet instead - it'll melt!!. Bake for about the same time/temp as above

If you have ice cream and milk, you could make a milkshake in the blender. Just add ice cream to the blender, and adjust the amounts of milk based on how thick you want it. (Add some milk, blend, test, add more milk, blend, test, etc) If you want a smoothie you can add fresh fruit, some fruit juice, and a little ice into a blender and mix it until smooth. Make sure to add enough fruit/juice so that it doesn't taste too watery. If you want an alternative to ramen you could boil water on the stove and add plain pasta, whatever kind is around, cook the pasta until it is tender (instructions on the box vary for the time) and mix in some butter, garlic, or any seasonings you like. If you have some kind of meat or veggies you could cook those and add them to the pasta. You could either fry the meat on the stove or bake it in the oven. Just make sure it is cooked all the way through (internal temp of 165 covers most meats). Instead of burnt toast you could make grilled cheese. Put butter on one side of two slices of bread, lay the one slice of bread butter side down on a frying pan, add cheese and the top slice, flip it to cook the other side, (takes like a total of 5 or less minutes). For dessert, if someone could buy you pudding mix and a graham cracker crust you could make a cream pie. Just follow the directions on a box of pudding to make pie filling and add it to the pre made pie crust. Put it in the fridge to cool and enjoy. You can add some whipped cream if you want/have it. If you have regular graham crackers around the house, you could crush them up with some melted butter and make your own crust. Add just enough butter for the mixture to be moist enough to spread in a pie pan and stick to it. If not graham crackers, you could do the same thing with oreos or fake oreos. Hope this helps :)

If your salmon is wild, simply bake it. Wild salmon has a strong flavor and needs no accompaniment. Simply serve with a mild side (vegetables and rice of your choice) and you will have a wonderful meal.

If your salmon is farm raised, it has no flavor. Dumping sauce on it will do no good. Just cook it and give it to the cat or a neighbor.

Sprinkle some garlic salt, & oregano over your salmon, place in a baking dish and drizzle with olive oil and bake in over until fish is cooked though...you can tell easily

If you have no garlic salt just sprinkle with salt & pepper & olive oil! sooo yummy serve with rice or potatos!

Go to www.kraftfoods.com to the recipe section. On the pull down select seafood and then under that fish dishes then go..There were too many for me to list but I've tried a few..simple, uses pantry items and time is very accurate. Good Luck and Enjoy!

My mom gave me this recipe it's GREAT


50 min 15 min prep
3 tablespoons butter, melted
1 onion, sliced
1 1/2 lbs salmon fillets
1/2 cup mayonnaise
1/4 cup freshly grated parmesan cheese
1 teaspoon worcestershire sauce
1/2 teaspoon paprika
1/2 teaspoon salt
2 tablespoons lemon juice
oregano
parsley

Pour butter in a 9"x13" pan.
Arrange onion evenly in bottom of dish.
Place salmon in a single layer on top of onions.
Combine mayo, cheese, worc.
sauce, paprika and salt.
Spread over top of salmon.
Sprinkle with oregano and parsley.
Bake at 350 degrees for app.
35 minute depending on thickness of salmon.

Simple with a Mediterranean touch: place skin side down, drizzle with oil, sprinkle with ground pepper, thickly slice some green pepper, some onion and a tomato on top, grill for about 15'.....enjoy!

Raw. sprinkle a little kosher salt on it and just be natural like the bears you see on Nature World on tv. yum yum, fresh salmon. that is a real tummy filler and will make you feel strong like a grizzly.
