I tried this one the other night. Salt and Pepper the chops and bake till done covered with foil (this will help prevent them from drying out). Mix equal parts of honey mustard and apricot preserves together and heat. Put sauce mix over the top of the cooked pork chops. It sounds a little funky but it was delicious. If I could get my 14 year old stepdaughter to eat it, it's got to be good.

If you want juicy and tasty pork chops, you should always start out with the following step:

2 cups vegetable broth
1/2 cup coarse-grained salt
1/2 cup light brown sugar
2 tablespoons black peppercorns, slightly crushed
1 pound ice
4 pork chops

Combine the vegetable broth, salt, brown sugar and peppercorns in a medium saucepan and set over medium-high heat. Cook just until the salt and sugar dissolve, then remove from the heat and add the ice.

Place the pork chops into a 2-gallon zip-top bag along with the mixture and seal. Place in a plastic container and refrigerate overnight.

After you take them out of the bag, rinse them off, pat them dry, and use your favorite recipe from then on.

I know this will sound simular, but it is just as good. It was my favorite thing, and requested it for my birthdays growing up. Pork tenderloin...wash the pork cutlets, dip in egg, and then into crumbled crackers. Fry in a frying pan. It is sooo good. And very easy. Be sure to have some apple sauce on hand to accompany it. Mashed potatoes and a good fresh green salad go well with this one. (Be sure to use real butter in the frying pan, it goes well with the pork chops and breading).

I make pork chops with a San Francisco Sauce. Its just equal parts soy sauce, brown sugar and about a clove of chopped garlic. Let the chops simmer in that for a little while.

Bailey's Smothered Pork Chops
From "Hallelujah! The Welcome Table" by Maya Angelou

List of Ingredients
* 6 thick slices bacon
* 1 large Spanish onion, sliced
* 6 end loin pork chops
* Salt and freshly ground black pepper to taste
* 1 cup all-purpose flour
* 2 Tbsp vegetable oil, if needed
* 1 cup hot water
* 1 cup milk

Instructions

1. Fry bacon in a large skillet on medium heat, and remove to paper towels to drain. Saute onion in same skillet with bacon fat and remove to paper towels to drain. Season pork chops with salt and pepper, and dredge in flour. Fry on medium heat in same skillet with bacon fat until light brown, and remove to warm plate.

2. Put remaining flour in skillet (add oil, if necessary). Brown flour lightly. Add hot water immediately, then milk. Stir vigorously. Season as desired with more salt and pepper.

3. Put pork chops, bacon and onion into gravy and reduce heat to simmer. Cover skillet and simmer 20 minutes. Check gravy for seasoning. Adjust as needed while food is still hot.

Makes 6 servings.

This is the best recipe - even if you leave out the bacon & just saute the onions in cooking oil.

Another idea is to marinate the chops in teriyaki sauce and grill or broil them. Serve with steamed rice and a cucumber salad.
