Are there any GPS products out there that will allow me to put the device in my car and see the route that the car has traveled on a separate device and/or a computer?

Yes, there is. You have two options. One will save the path driven on memory for downloading to a computer at a later time. Another option will send the data as the vehicle is being driven.
Both are fairly expensive.
One thing you need to know is that 'real time' display is very expensive due to the necessity of a continuous radio link. Usually, the info. is only updated every 20 to 30 minutes but you can elect to do it more often.
