At my house we have the same type of dinner everyday with barely any variation. Its very boring. I need some good dinner ideas.

I make a red curry chicken if I want spicy with an Thai kick-
1.5 lb chicken, cut up into bite sized pieces
2 Tablespoons of red curry paste
1 can of coconut milk
1 teaspoon sugar
2 teaspoon fish sauce (you can omit without too much flavor loss if you like)
veggies- I use one red bell pepper and about 2 cups of either sugar snap peas or brocolli
1T oil

Heat oil in a large skillet type pan. Add curry paste, cook until it starts to "foam"- about 3 minutes on med-med hi heat. Add can of coconut milk (be sure to shake it up good before you pour it in to mix it up). Cook for about 5 minutes, until hot. Add chicken and cook for 8-10 minutes, until not pink inside. Then, you add the sugar, fish sauce and veggies. Cook until veggies are tender, but still crunchy. Serve over jasmine rice or my favorite- thin rice noodles. You just boil some water, and then add the noodles straight from the package- remove from heat. Let soak for about 15 minutes and then drain. It's GREAT!


Another is shepard's pie. Cheap and easy, but really yummy.

1.5 lb ground beef
1 medium onion, diced (you can use frozen onion if you like)
Worcestershire sauce
1 bag of frozen sweet corn
5 potatoes
9x13 glass pan

Cook the beef, onions and flavor with the worcestershire sauce until the beef is done. Peel the potatoes and cut into small pieces to make mashed potatoes. Place the beef mixure in the 9x13 pan, then layer the corn on top of that. Then use your mashed potatoes to cover the corn. Cook in 350 degree oven for about 30 minutes. Done!


Roasted red pepper Chicken

1 jar of roasted red peppers
1 bag of mozzerella cheese
4 chicken breasts, pounded flat and even
lemon juice
minced garlic
italian seasoning or oregano

Take your flattened chicken breast and sprinkle italian seasoning on chicken, splash lemon juice and add a little bit of garlic. Put a slice of red pepper on top and sprinkle with a good amount of cheese. Roll up the chicken and secure with a toothpick or two.
Place in an oven pan and cook for 30 minutes at 350 degrees or until the chicken is done. Serve with flavored rice and veggies. De-lish!

Boneless skinless chicken breasts, let them marinaid all day in Lawrey's or in an italian dressing. Grill them traditionally or on a George Foreman Grill. Make a side of corn on the cob and get a bag of small red potatoes. Boil them (skin on) in a pot. Add a couple tablespoons of Zataran's Crab Boil to the water. It gives the potatos a nice kick. This is a quick and easy dinner.

If you don't like chicken, take boneless pork loins and season them with McCormick Seasoning Salt or Tony's (if you like more kick) and pan fry them in just a touch of olive oil. Sear on both sides, flipping until they are all the way done.

Mmmmm.

I love to cook and try to vary each week what we eat.

This is what we had for this past week.

Working backwards..

Monday..........Tostadas Corn tortillas layered with ground cooked beef flavored with cumin and chile powder, oregano, salt and pepper. Refried beans that I added a can of green mild chiles to, shredded lettuce, grated cheese, sour cream and picante sauce for toppers. Cooked the tortillas in hot oil and drained on paper towels then layered the other ingredients sure was good and did not take too long to prepare.

Sunday......chicken chow mien..rice and fried noodles

Saturday.....Scalloped potatoes and ham and green beans on the side.

Friday.....Fried chicken wings ..and tossed salad ..garlic bread

Thursday.. Tomato puree...Tomato sauce with zucchini sliced, bell pepper, onions and Italian seasonings.garlic.parsley boneless pork chops cut into cubes. browned and simmered about an hour then served with Italian pasta...had Ziti. Salad...and toasted Garlic bread.

This is as far back as I can remember.....lol I love to cook and never get bored in the kitchen.

I dont' really eat dinner unless my husband is home. I have a salad for a late lunch.

Some of my favorite things to fix are chili dogs (not healthy but tasty!), baked potatoes with toppings, anything in the crockpot (I esp like BBQ chicken... throw in a couple breasts in with the sauce then shred it after it's cooked all day), and salads.

3. blackend chicken, green bean casserole, fried cream corn, and scalloped potato's with texas toast.

Soup & salad is such a good variation!!! Make campbell's soup & then make a salad with chicken!

im calore counting, so ive been eating lean cuisine meals lately. they have lots of varities and all are ok but tehre a few i prefer more than others.
