Cinnamon has been popular since ancient times. Egyptians imported it from China in 2000 BC. Romans believed Cinnamon was sacred, and Nero burned a year's supply of the spice at the funeral for his wife. Finding Cinnamon was a primary motive of world exploration in the 15th and 16th centuries.
Cinnamon is the dried bark of various laurel trees in the Cinnamomunn family. One of the more common trees from which Cinnamon is derived is the cassia. Ground cinnamon is perhaps the most common baking spice. Cinnamon sticks are made from long pieces of bark that are rolled, pressed, and dried.
For a fragrant pilaf, cook rice in Cinnamon flavored broth and stir in chopped dried fruit and toasted nuts. The sweetspicy flavor of Cinnamon enhances the taste of vegetables and fruits. Cinnamon is a perfect partner for chocolate; use it in any chocolate dessert or drink. It is used to mellow the tartness of apple pie. Ground Cinnamon should not be added to boiling liquids; the liquid may become stringy and the Cinnamon will lose flavor.

This evergreen tree grows to a height of 5-8m. It has tough leathery leaves and clusters of small flowers followed by acorn-like berries. The varieties most used are Ceylon cinnamon (Cinnamomum zeylanicum) and Chinese cinnamon (C. cassia). Cinnamon is an important element in Ayurveda- a traditional medicine practised in India for more then 5000 years.
Bark - Trees that are eight years old or older are harvested every
two years.
The tubes of dried bark are used for infusions, tinctures and powders.
A distillate of the bark produces an essential oil with a smell like pepper.
Ceylon and Chinese cinnamon have constituents that vary slightly. Both types of bark contain up to 2% essential oil, largely made up of cinnamic aldehyde. But Ceylon cinnamon also contains a small amount - 1% - of eugenol, while only a trace of this substance occurs in Chinese cinnamon.
The properties of the Ceylon and the Chinese varieties are very similar. Cinnamon bark is antispasmodic; it also stimulates the salivary glands and the mucous membranes of the stomach. It is used to treat a range of digestive problems including indigestion, poor appetite, trapped gas, nausea, belching, flatulence, diarrhoea and intestinal spasms.
CAUTIONS
The essential oil can trigger skin allergies and inflammation of the mucous membranes.
Use cinnamon oil only under medical herbalist supervision.
If pregnant or breastfeeding do not consume more cinnamon than is normally present in food.

One important cinnamon fact is that the ground cinnamon and small cinnamon sticks you buy at the store aren't cinnamon at all! They are cassia, a spicy bark from a completely different tree. True cinnamon has more flavor and less bite, is fairly expensive, and an average true cinnamon stick is over a foot long.
