I have heard that flower girls should throw pennies and flowers at a wedding to signify someone who has passed away. Has anyone else heard of this?

This might be a "Ways to Make the Bride & Groom Kiss"
Traditionally, reception guests will tap their champagne glasses with their flatware as an audible request for the bride and groom to kiss. As inviting, or ludicrous, as this may sound, there are other alternatives to this age old tradition Throwing the pennies while the bride and groom kiss / dance. That could be what your looking for.

I have heard of throwing coins at the bride during the reception, but it's for good luck/prosperity. I have never heard of throwing pennies in the way you mentioned.
