This was my favorite cake as a kid... requested it every birthday :-)


Strawberry Cake

1 cake 1¾ hours 1 hour prep

1 (18 ounce) box white cake mix (make sure it is white)
1 1/4 cups water
1/3 cup vegetable oil
3 eggs
2 tablespoons strawberry gelatin
1/4 cup boiling water
1 1/4 cups crushed strawberries
1 1/4 cups sugar
1 1/4 cups sour cream
1 (16 ounce) container whipped topping

Prepare cake mix as directed in 9 x13 pan, let cool.
While cake is baking, dissolve gelatin in boiling water.
When completely dissolved, stir in strawberries, sugar, and sour cream.
Place strawberry mixture in refrigerator until cake is cool.
When cake is cool to the touch, poke holes all over the top with the end of a wooden spoon or chopstick.
Pour strawberry mixture all over cake.
Frost with whipped topping.
Refrigerat overnight to allow strawberry mixture soak into the cake.
Note: The strawberry mixture is very runny, but will soak into the cake if ALOT of holes are poked on top of the cake and it is allowed to chill overnight.

There are many ways to prepare a strawberry cake.
Be creative and think of all the different way you can feature the strawberries....like in the cake, over the cake inside and outside..with a pudding filling. Sliced between the layers with whipped cream or ice cream. There are many ways.

You can make the cake from scratch or you can buy any flavor you want that comes in a box mix. If you want to make one from scratch home made then I'd suggest a "yellow layer cake". It's the easiest and uses a few ingredients.

Prepare the cake and bake in two round cake pans.When you remove it from the oven let cool completely. Slice each layer across in half. through the middle...with a serrated (large teeth) knife. Have some vanilla ice cream softened to spread on top of each layer. Add some sliced strawberries then the next layer. Until you top the last layer. Wrap the cake in foil or plastic wrap and freeze. Remove from freezer enough time for it to soften and spread some whipped cream over the top and sides and decorate with more berries...

To whip the whipping creme you just need some sugar and vanilla and a electric mixer don't whip too long or the whipping creme will turn to butter.....keep the bowl ice cold and the beaters too and it will turn out great. You just add a few tablespoons of sugar to taste and a teaspoon of vanilla.

I've got a recipe for a really good cake you can make with white cake mix and cool whip and jello mix... i usually make it with raseberry flavored jello but strawberry would work just as well.

Make a layered white cake but don`t put the layers together, after it is done cut into pie shapped pieces and put berries on top
