Of course It is appropriate to serve other alcoholic drinks rather than serving beer, wine, or champagne. It is very good judgment not to serve any type of beverages that you believe your guests will not consume; otherwise, you will be spending money unnecessarily. In addition to the other types of alcoholic drinks you plan to serve, I would also provide a small selection of non-alcoholic beverages as well.

If you are offering other alcohol, then I think you should still offer beer, wine, and champagne for the toast. When serving alcohol, if you give the option of a cheaper drink (beer) and a guest chooses to drink that, then you have just saved money over the mojito they may have selected otherwise.
You can have beer and wine without other alochol, but not the other way around. You can also do neither and offer an Italian Soda bar instead.

YOU choose what to serve at your wedding. I did. No alcohol was there, plenty of non alcoholic drinks, and still had 90% of the invited guests show up. It's a personal preference. There is no right or wrong, only what's right or wrong for you and your "to be". Congratulations! Do it your way! It is your day!

You can choose to serve whatever you like. If you know that none of your guests will drink beer/wine/champagne, there is no sense in wasting money on it. Serve what you would like to drink or what you know your guests will like.

You are the host. You can decide to serve or not serve anything you like, as long as you are paying for it.
As long as you do not start being rude and passing off your costs to your guests by have a cash bar of any type, then you are fine. A proper and polite host pays for everything being offered and served.

When I was planning for my wedding, the Hotel in which it was going to be held told me about a cash bar. That is if you don't want to bother with footing the bill of every ones drinks (which can be very expensive), a cash bar is a bar, and your guests pay for their own drinks.

Serve punch, soda pop, coffee, tea... If you want something to toast with you can always get that non-alcohol champagne.

I do not provide alcohol at any of my functions, people know it and bring their own if they want to drink...and alot of times I might have a drink of theirs...
