Roast beef sandwiches. You probably don't need a recipe for roast beef, I am thinking, but it is the only meat I think still tastes very good, cold. Add cheese, lettuce, mayonnaise, mustard, pickles, steak sauce, onions, vinegar/oil ,whatever you like! Add all the ingredient's you like with the sliced roast beef onto GOOD sourdough bread (or french loaf), wrap it up tightly in plastic wrap, and lay a brick (no kidding, a BRICK) or anything else very heavy, refrigerate, for at least ONE hour, and the sandwich will be flat, and easy to eat. (if you don't have a brick, use a glass bottle full of water, put into a pan, and set atop of the sandwich). All of the flavors will be melded into the bread, and it is delicious!

San Antonio Chicken Salad
Makes 4 servings
Ingredients:
2 large whole chicken breasts, split, boned and skinned
1/2 cup salsa
1/2 teaspoon ground cumin
1/4 teaspoon salt
1/4 cup sour cream
2 tablespoons mayonnaise
1 ripe avocado
1 cup sliced celery
Bibb or leaf lettuce leaves
4 crisply cooked bacon slices, crumbled
Preparation:
Cut chicken into 1/2 inch cubes. Combine salsa, cumin and salt in 10-inch skillet. Cook chicken in salsa mixture, stirring frequently, until cooked through, about 4 minutes. Transfer contents of skillet to mixing bowl; cover and chill thoroughly.
To serve, combine chicken mixture, sour cream and mayonnaise. Mix well. Peel, seed and coarsely chop avocado. Add avocado and celery to chicken mixture. Mix lightly. Spoon onto lettuce-lined salad plates; sprinkle with bacon. Serve with additional salsa on the side.

I like to do herb breaded chicken tenders or breasts. I make them for super and then sneak one later on that night for a snack. They taste yummy cold.
Chicken tenders or breasts...dip in egg was and then into the following mixture:
Italian style bread crumbs
parm cheese
3 cloves garlic chopped
red chili flakes
salt
pepper
rosemary
thyme
Brown these babies up in some olive oil on both sides. The tenders will probably be cooked through...the breasts will probably have to be transferred to a cookie sheet and put in a 350 oven for 5 or 10 minutes. FYI: If you top these with your favorite spaghetti sauce and provolone cheese you have a nice chicken parm to serve with spaghetti.

boil some skinless boneless chicken breast and the shredd when cooked.add some mayo and a can of peas and carrots along with a can of sweet corn kernals.flavor with salt/pepper.you can make sandwiches and serve them cold.they taste great with chips
