Since chicken is so bland it needs something to wake it up!
Any smoked meats would be a good choice such as ham.
If you want you can stuff it with broccoli and cheese
Make sure you salt and pepper the breast good first.
Try a combo of green, red, and yellow peppers. Then make a white sauce and pour over the breasts the sauce can be seasoned with garlic, salt and pepper and some Parmesan cheese. and baked in the oven.
If you don't have the experience making the white sauce it's very easy. You take about 1/2 stick of margarine or butter and add about 4 tablespoons of plain flour to the butter and stir together to a paste in a medium size boiler pot. cook on medium heat then add 2 cups regular milk then the seasonings and stir until the consistency you want. Kind of like buttermilk that thickness. the main thing here is controlling the heat not too high and not too low so the sauce doesn't burn on the bottom.
When you stuff the breasts add some butter inside the opening to give it a richer flavor.

There is always chicken cordon bleu. It has ham and swiss cheese.
6 chicken breasts
6 slices swiss cheese
6 slices ham
3 tablespoons flour
1 teaspoon paprika
6 tablespoons butter
1/2 cup dry white wine
1 teaspoon chicken bouillon
1 tablespoon cornstarch
1 cup whipping cream

Chicken Breasts
Pound chicken breasts if they're too thick.
Place a cheese and ham slice on each breast within 1/2 in. of edge.
Fold edges of chicken over filling and secure with tooth picks.
Mix flour and paprika and coat chicken.
Heat butter in skillet and cook chicken until browned on all sides.
Add wine and bouillon.
Reduce heat to low, cover and simmer 30 minutes.
Remove tooth picks and transfer breasts to warm platter.
Blend cornstarch with cream and whisk slowly into skillet.
Cook, stirring until thickened and pour over chicken.

Mozerella cheese, with a hint of garlic and fresh parsley!!! Yummo!!! Or you could do stuffing in it, like the box kind... Stove Top is it called....... Easy to make and my kids happen to love it!! Just buy the chicken kind, or make your own homemade stuffing to put in it, and add a tad of water in the pan to bake it in, and the water makes the chicken turn out so moist!! I like making Ina Garten's chicken Parmesan!! Such a delicious recipe!! She used to cook for the white house , and got tired of taking order's from the staff there, so she went out on her own, and started her own businesses, and now she's got cook books out, plus her own show on the food network..... You could look up her recipe online at foodnetwork.com, and look up her name and see if you cant find her recipe for chicken parmesan... saute spinach with garlic
add in chopped sausage meat (remove sausage from the casing) saute until brown add in cooked brown rice.
cool the mixture
place a spoonful of the mixture onto the chicken breast and add a piece of provolone cheese, roll and tack together with a couple of toothpicks. roll the chicken breast in flour and sauteed in oil and butter, add mushrooms, white wine cook until the chicken is cooked thru....about 10 minutes on low heat..

My favorite is sauteed spinach, chopped artichoke hearts, parmesean cheese, a little ricotta, garlic, oregano, salt and pepper. It's like spinach-artichoke dip stuffed inside chicken. Another good one is chopped, dried cranberries, walnuts and brie. Slightly sweet, but very good and rich.

i like chicken cordon bleu however, the other day i didn't have ham, nor did i have any swiss, BUT i did have deli slices of pastrami and pepper jack which i substituted... and lemme tell you, it was awesome... added some kick to it. (ps: also for the breaded crumbs, i added some pepper flakes, yumm) :)
the other guy who suggested feta and spinach, that's also a favoite of mine
